Healthy and hearty. This plant-based hash combines tender and smoky Carnitas with sweet, fresh veggies, and fluffy Just Egg™ for a scrumptious, protein-packed meal.

Ingredients
- 2 tbsp vegetable oil
- 2 medium sweet potatoes, peeled and cut into 1” cubes
- 1 red bell pepper, thinly sliced
- 1 green bell pepper, thinly sliced
- 1/2 small yellow onion, thinly sliced
- 1/2 tsp kosher salt
- 2 cups Barvecue Carnitas
- 1/2 cup Just Egg
- Fresh cilantro for garnishing
Directions
In a large skillet, cook Carnitas according to package instructions while prepping veggies. When done, transfer Carnitas to a bowl and set aside.
- In same large skillet, heat oil over medium-high heat.
- Add the sweet potato cubes to the skillet and fry for about 5 minutes. Make sure to turn occasionally when starting to brown. If sweet potatoes brown too quickly, reduce heat slightly.
- Add peppers and onions to the skillet and continue to cook until vegetables are tender, about 10 minutes.
- Meanwhile, in a separate small skillet, cook Just Egg until it reaches preferred consistency.
- Add cooked Carnitas and Just Egg to large skillet and cook until everything is thoroughly heated. Season with salt.
- Top with fresh cilantro and serve.
