Healthy and hearty. This plant-based hash combines tender and smoky Carnitas with sweet, fresh veggies, and fluffy Just Egg™ for a scrumptious, protein-packed meal.
Ingredients
2 tbsp vegetable oil
2 medium sweet potatoes, peeled and cut into 1” cubes
In a large skillet, cook Carnitas according to package instructions while prepping veggies. When done, transfer Carnitas to a bowl and set aside.
In same large skillet, heat oil over medium-high heat.
Add the sweet potato cubes to the skillet and fry for about 5 minutes. Make sure to turn occasionally when starting to brown. If sweet potatoes brown too quickly, reduce heat slightly.
Add peppers and onions to the skillet and continue to cook until vegetables are tender, about 10 minutes.
Meanwhile, in a separate small skillet, cook Just Egg until it reaches preferred consistency.
Add cooked Carnitas and Just Egg to large skillet and cook until everything is thoroughly heated. Season with salt.
