Barvecue Spinach Salad in a Jar
Crunchy fruits & vegetables combine with tender Barvecue to make this quick, fresh, healthy and flavorful, plant-based meal on the go.
Ingredients
For the salad:

1 medium carrot, peeled and chopped

1 handful purple cabbage, shredded

1/2 green apple, chopped

1 roasted red pepper, chopped

1 cup Barvecue Pulled BVQ
-
sprinkle of cilantro
-
spinach to fill rest of quart sized mason jar
For the dressing:

2 tbsp olive oil
-
1 tbsp BBQ sauce
-
juice of 1/2 lime
-
1 tsp apple cider vinegar
Directions
Cook Pulled BVQ according to package instructions.
- Meanwhile, mix dressing ingredients in the bottom of a quart sized mason jar.
- Carefully layer in order: carrots, purple cabbage, green apple, roasted red pepper, Pulled BVQ and cilantro.
- Pack the rest of the jar with spinach.
- Put the top on and take it to go (or place in the fridge until ready to eat).
- Shake and enjoy!
