Ahhhhh! The satisfying sensation of crunch… tender chew… and the ensuing wood-smoked, plant-based flavor explosion.

Ingredients
- 2 burrito-size flour tortillas
- 1 cup shredded vegan cheddar cheese
- 1 cup Barvecue Carnitas
- 4 tbsp fresh pico de gallo, extra liquid drained
Directions
Cook Carnitas in a pan according to package directions.
- Place a large cast iron skillet on medium heat to warm.
- Prep quesadillas by sprinkling cheese evenly over the two tortillas. Next, add Carnitas and pico de gallo atop the cheese on one-half of each tortilla.
- One at a time, add the prepped tortillas to the cast iron skillet and cook 3-5 minutes. Keep an eye on it to ensure the bottom of the tortilla doesn’t burn.
- Once cheese becomes melty, use a spatula to fold the cheese half over the Carnitas half. Transfer to a cutting board to be cut.
- Repeat the process with the second quesadilla. Cut and serve.
