Barvecue Carnitas Soup

The pungent flavor of cumin combines perfectly with authentically wood-smoked Carnitas to bring you this warming savory soup.

Ingredients
- 3 cups veggie stock
- 1/2 lb Yukon gold potatoes, diced
- 2 cups Barvecue Carnitas
- 1 cup salsa verde
- 1 tsp ground cumin
- 1/2 avocado, sliced (optional)
- Fresh cilantro, chopped (optional)
Directions
Add veggie stock, potatoes, Carnitas, salsa verde and ground cumin to a stockpot, then stir to combine.
- Heat over medium-high heat until boiling, then cover and reduce heat to medium low and simmer for about 10 minutes, or until potatoes are just done.
- Taste and season with salt and pepper, if needed.
- Top with avocado and cilantro.
