Carnitas Burrito

The addition of wood-smoked Carnitas makes this classic plant-based staple even better. The additional protein adds a pop of both chewy texture and mouth watering flavor.

Ingredients
- 3 cups Barvecue Carnitas
- 4 burrito tortillas
- 2 cups cooked brown rice
- 1/4 cup cilantro, chopped
- 1 cup black beans, drained
- 1 cup pico de gallo
- 1 cup guacamole
- 2 cups shredded vegan pepper jack cheese
Directions
Cook Carnitas according to package instructions.
- Mix cilantro with cooked rice in a medium bowl.
- Heat up tortillas so they are pliable.
- Spread 1/2 cup of cilantro rice down the middle of the tortilla. Add 1/4 cup black beans, 3/4 cup Barvecue Carnitas, 1/4 cup pico de gallo, 1/4 cup guacamole and 1/2 cup of vegan pepper jack cheese.
- Fold in the opposite sides of each tortilla, then roll up. Place seam-side down and wrap in aluminum foil. Repeat with the rest of the burritos.
