Small in size, big on flavor. Tender, wood-smoked Carnitas meld perfectly with other ingredients to create these chewy, satisfying and unique plant-based breakfast bites.

Ingredients

1/2 cup tomatoes, diced

1/2 tsp olive oil

1 cup Barvecue Carnitas, cooked

12 oz Just Egg

3 tbsp full-fat coconut milk

1/2 tsp salt

1/4 tsp ground black pepper

1 tsp smoked paprika
Directions
Preheat oven to 350°.
Line a muffin tin with paper or silicone liners.
In a skillet, cook Carnitas according to package instructions. Once browned, add tomatoes. Stir until combined and cook until tomatoes begin to soften. Remove from the heat.
In a separate bowl, combine Just Egg, coconut milk, salt and pepper. Whisk.
To build the muffins, evenly distribute the tomato and Carnitas filling to all 12 lined muffin cups. Sprinkle with a pinch of smoked paprika. Then, pour Just Egg mixture into each cup until 3/4 of the cup is full.
Bake until fully set, about 30-35 minutes.
Remove liner from each muffin and enjoy!
